Steps
Preheat your oven to 180°C / 350°F and line a baking sheet with parchment paper.
Steam the chopped spinach for 2-3 minutes, then place it in a clean tea towel and squeeze out as much liquid as possible.
In a medium bowl, combine the squeezed spinach, ricotta, beaten egg, breadcrumbs, and parmesan. Mix until well incorporated.
Roll the mixture into small, kid-friendly balls (about 2 cm / 1 inch) and place them on the baking sheet, gently pressing down to flatten slightly.
